A takohiki knife for filleting and slicing fish.
This long, slender single bevel blade has been forged from shirogami yasukiko steel for an excellent edge that is easy to sharpen.
Its rectangular tip is characteristic of ancient blades in the Kanto (Tokyo) region. It is the equivalent of the yanagiba, or sushi knife.
The handle is in Japanese cypress, renowned for its resistance to humidity, and it is topped with a ring made from buffalo horn.
This takohiki has been made in the pure uchi-hamono tradition of Sakai.
