A sakimaru is a Takohiki with a rounded tip. It resembles a small katana. This is a bevelled knife in the Japanese tradition. It allows you to make precision cuts with a single stroke, and to cut very thin slices. Its purpose is the same as a yanagiba, and it is used mainly to make sushi and sashimi in Japan.
The blade is made from VG-10, superior Japanese stainless steel from Takefu. It is extra hard, which ensures the edge remains sharper longer. The alloy is highly resistant to wear and warping, as well as to oxidation. The finishing of the blade is perfect and the edges have been polished with minute care.
The handle is made from magnolia wood with a ferrule of real buffalo horn. It has been given an octagonal shape to provide a good grip. The blade is “cemented” to the handle to prevent humidity from infiltrating.
