The yanagiba, or sashimi knife, is the traditional knife of Japanese chefs, used for making sashimi and sushi. It is slender, with a single bevel for precision slicing, idea for producing thin slices.
The VG1 steel from Takefu that has been used is a stainless steel with a high carbon content to increase hardness and durability.
The handle is made from Pakkawood.
