A chukabocho is similar to a butcher’s cleaver, but thinner. Originally, this kind of cleaver came from China, and it can be used for cutting vegetables as well as meat or fish.
The VG1 steel from Takefu that has been used is a stainless steel with a high carbon content to increase hardness and durability.
