The nakiri is slender and rectangular-shaped, and used for cutting up vegetables. Unlike a usuba, it is sharpened 50/50, and the edge is slightly curved to facilitate mincing on a cutting board.
The suminagashi blade in AUS-10 has beautiful contrasting motifs. It has been polished to give it a brilliant, luminous aspect, which makes it especially attractive. The stainless steel used contains around 1% carbon along with molybdenum and vanadium to make it harder and stronger.
The handle is made from magnolia wood with a ferrule of real buffalo horn. It has been given an octagonal shape to provide a good grip. The blade is “cemented” to the handle so that it is perfectly fixed in place and humidity is prevented from infiltrating.
